Scalloped Tomatoes

  With garden produce about to become readily available – this is a terrific spring summer dish fresh from you backyard.  It’s delicious!  I recommend using parmesan you have grated freshly yourself, rather than the powdery stuff you can buy in the grocery store.

Scalloped Tomatoes

Adapted from Ina Garten via the Barefoot Contessa on the Food Network

•Olive oil, 2 tablespoons plus more for drizzling at the end

•Crusty bread, cut into 1/2-inch dice, 1 1/2 cups

•Tomatoes, 8 medium, cut into 1/2-inch dice

•Garlic, 2 cloves, minced

•Sugar, 1 tablespoon

•Salt, 1 teaspoon

•Pepper, 1/2 teaspoon

•Basil, julienned, 1/4 cup lightly packed

•Parmesan, grated, 1/2 cup

Preheat oven to 350 degrees F.

Heat olive oil in a large saute pan over medium heat. Add the bread cubes and stir to coat with the oil. Cook over medium to medium-high heat for five minutes, stirring often, until the cubes are evenly browned.

Meanwhile, combine the tomatoes, garlic, sugar, salt and pepper in a large bowl. When the bread cubes are done, add the tomato mixture and continue to cook, stirring often, for five minutes. Off the heat, stir in the basil.

Pour the tomato mixture into a shallow baking dish (I used my ceramic pie dish). Sprinkle evenly with Parmesan cheese and drizzle with some olive oil on top. Bake for 40 minutes or until top is browned and the tomatoes are bubbly.

  1. This is a favorite of ours and one we do often when the tomatoes are good. Actually this method makes any tomato taste good. I totally agree with you on grating your own Parmesan. Even when you buy good Parmesan that's pre-grated, it's not the same as grating it yourself.

  2. A childhood favorite of mine, I think of my Grandma Keeling whenever I make this delicious side! The cheese has to be good Parm, grated fresh and lots of cracked pepper. Our tomatoes will be July or later this year with all the cool rainy weather, so looking forward to fresh veges!

  3. My Mom made something like that years ago for my Dad. It was minus the garlic and basil and the cheese. She called them breaded tomatoes. I still like them once in awhile. thanks for the new version recipe!

  7. This looks delicious; think I'll make it tonight with some of my home canned tomatoes. It won't be as good as fresh but there's no fresh to be had quite yet.

  14. I remember my mom making this dish, but she called it "breaded tomatoes"–and I wouldn't touch it! Of course as an adult I absolutely love it!
    Can't wait for the local Farmer's Market to have fresh tomatoes–looks like it will be a while before our garden tomatoes will be producing. Because of all the rain and storms, we had to replant some things!
