Chicks, Cool finds and Artichokes

The chicks are now a few weeks old and growing some serious feathers. I’ve made their brood box bigger so they can run and jump and flap their wings.   I supplement their medicated chick starter crumbles with chopped up parsley and spinach and crushed hard boiled egg – they love the yoke in particular.  One of them has developed a scissor beak and I’m not sure she’ll make it.  When chicks hatch out of the egg they protect their head and beak with one wing over it as they claw/peck their way through – When they fail to do that they can develop an injury to the beak that becomes more evident as they mature – which is what’s happening with Cersei. Some live with the condition, some don’t.  She is the one on the bottom left corner – if you look closely at her beak, you’ll see the misalignment. 

Meanwhile.. out at the coop – the girls are getting out to free range more often now that the weather has improved, and they’re loving it.  Ruby is my friendliest hen… 

 

 
 Their favorite places to hang out around the yard are under the big pine tree at the front of the garage and the side of the garage where the dust baths are divine and the worm scratching prolific.  Hence all the mulch in disarray. 
 

 
I’ve been doing some Spring cleaning here at the farmstead, tackling a clutter issue I’ve been ignoring but annoyed by for some time.  The big window in the keeping room area that the dogs sleep under has housed my plants on a table for a while now. The problem is it blocked the light/cluttered the view, just looked like an afterthought.   Two days ago I came across a very old plant stand in an inexpensive antique store and had an aha! moment.

 The plants are now on the stand on the other side of the bar divider, in the dining table area.   They’ll  get the same light, so I’m hopeful they will be happy there.  I do need to raise my stained glass creation, but it’s a heavy piece and will need one of the menfolk to get the job done without smashing it. 

 
This recipe has been circulating facebook, and I’m definitely going to try this as a seaside supper at the cottage. Looks delish! 
 
Stuffed Artichoke bottoms with lemon and shrimp
 

 
 
 
Servings: six as a first course; two as main course.
These stuffed artichoke bottoms are impressive appetizers but also make an elegant main course for two.
 

Ingredients

For the breadcrumbs

  • 3 Tbs. extra-virgin olive oil
  • 3 Tbs. chopped fresh flat-leaf parsley
  • 1 Tbs. chopped fresh thyme
  • 1 clove garlic, minced
  • 1-1/2 cups coarse day-old breadcrumbs

For the artichokes and shrimp

  • Kosher salt
  • 6 large artichokes, trimmed down to bottoms 
  • 3/4 lb. medium (51 to 60 per lb.) shrimp, peeled and deveined
  • 1-1/2 Tbs. extra-virgin olive oil
  • 1/8 tsp. cayenne
  • Freshly ground black pepper
  • 6 Tbs. unsalted butter
  • 3 Tbs. chopped fresh flat-leaf parsley
  • 2 Tbs. fresh lemon juice

Preparation

Make the breadcrumbs

  • Heat the oil in a 10-inch skillet over medium heat. Add the parsley, thyme, and garlic. Cook, stirring, until fragrant, about 1 minute. Add the breadcrumbs and increase the heat to medium high. Cook, stirring, until the breadcrumbs are golden-brown and crisp, about 5 minutes. Immediately transfer to a bowl lined with paper towels. (The crumbs may be made up to 1 day ahead; cool and store in an airtight container at room temperature.)

Prepare the artichokes and shrimp

  • Position a rack in the center of the oven and heat the oven to 400°F.
     
    In a 3- to 4-quart saucepan, bring 4 cups of water to a boil over high heat. Add 2 Tbs. salt, drop the artichokes in, and cook until tender, about 10 minutes. Remove from the water with a slotted spoon. Spread out on a clean cloth to cool and dry.
    Heat a 10- to 11-inch cast-iron skillet over high heat. In a large bowl, toss the shrimp with 1 Tbs. of the olive oil, the cayenne, a pinch of salt, and a few grinds of pepper. Working in two batches, sear the shrimp in the hot pan, turning once, until lightly browned on the edges and opaque throughout, 1 to 2 minutes per side. Transfer each batch of shrimp to a medium bowl.
    In a small saucepan, gently melt the butter over low heat. When the butter is just starting to foam, add 2 Tbs. of the chopped parsley.Let the parsley sizzle in the butter for 1 or 2 minutes and then whisk in the lemon juice. Add the butter mixture to the bowl with the shrimp and toss.
    Oil an 8×10-inch baking dish with the remaining 1/2 Tbs. oil and arrange the artichoke bottoms stem side down in the dish. Season with salt and pepper. Pile 5 to 6 shrimp in the center of each artichoke bottom, including some but not all of the butter. Top with the breadcrumbs and drizzle the remaining butter and the shrimp juices over the top. Sprinkle with the remaining 1 Tbs. parsley and bake until heated through, about 10 minutes. Serve immediately.
 
One last thing before you go – I laughed out loud when I saw this one..

Snow Day

   

     Under normal circumstances they don’t like each other- they argue over who’s the boss, they don’t always perceive the same things as dangerous or even agree on who’s a friend and who’s a foe. They don’t share well with each other, but somehow the storms change things. Butt to Butt- they weather those  storms and find common ground, they find comfort in each other. We could learn a few things from dogs…..


 
     

   Something I took for granted for all these years-  Democracy. I never realized how truly fragile it is, and at any point in history, what we depend on can come crumbling down.  Maybe a dividing, lying, egotistical blowhard like Tr*mp had to happen in order to flush out all the corruption, the hypocricies, the bigotry, racism and  blind allegiances that clearly still course through the veins of our republic.  Maybe all the shortsightedness on both sides of the aisle and the less than stellar motives of some of the extremists, both left and right,  needed to be exposed in order to eventually heal what is clearly very broken. 

   I’m encouraged by the good things that are coming of this collosal mess, people are voting, for one thing.  Women are coming forth and getting elected at record rate – Republicans and Democrats are questioning some of the failings of their own parties and striving for something better.  In many places We the People are being heard.    Amen… and Amen again. 

    

    Last night we had our first real snow fall – 



       This morning it’s all pretty wet, with rain in the forecast. 




 The green thing in the upper right hand corner is the umbrella I was using to shield me from the wind and drizzle as I fed horses and chickens. That’s the thing about these adorable farm animals.  Doesn’t matter the weather, they need their feed.  My morning commute …..

Fiona says Good Morning!   (actually, she’s clucking ” It’s cold – where’s my F-ing oatmeal” . Yep, she swears – I’m a bad influence, I know it. )


   

      I’ve started the holiday decorating inside – not too christmas-y yet because we’re hosting Thanksgiving dinner here.  Nothing says disrespect for the Thankful holiday like Christmas up in your face before you’ve even carved the bird.

 Usually I have a coffee cake or brownies or cookies in the glass cake stand on the kitchen island. We’re all trying to watch our calorie intake ( we’re watching it, alright… as it goes in our mouths….)  and for some reason I believe we’ll eat less crap if it comes in small wrapped packages… ha ha ha… ha. 




   
  Anyway… a few chuckles for you on this dreary grey New England day….

Couch sitting

    Mom and I went couch sitting yesterday.  That is, we went to a furniture store where I proceeded to covet so much stuff , I just wanted to redecorate my entire home. While doing the coveting we also sat on a bunch of couches to determine which would be a good fit in MOM’s  home. 
     When you’re short like us, (5’4″ – ish)  it’s important not to have a couch that’s too deep, or you end up looking like Shirley Temple swinging  your legs in the distance between your feet and the actual floor.  Either that or your feet are touching the floor but you’re all slouched back, gazing at the ceiling.   When you nap on it frequently, it’s important that the arms  aren’t too thin and hard or thick and high, so that you don’t snap your neck in the process of  the napping.  When you’re indecisive like my mom, (hi mom! Love you lots!)   it’s important that the couch in question be not too different than what you’ve had before, but maybe very different, yes, maybe, no, not sure, I don’t know, I don’t want to think about it now.  Also, there’s the issue of the color.  In mom’s case, a neutral color is far more scary than, say… LIME GREEN COUCHES and PINK WALLS AND CARPET.    That actually sounds scary, doesn’t it… and yet mom did this with vigor, and admittedly… it was a relative success in her home for a long while.  But now.. with the prospect of NEUTRAL… well, we’re all aquiver.  
     We did find what I believe will be a lovely couch in a neutral shade, and I hope that is what she believes when it eventually lands in her living room.  I’m especially hoping there was no perception of BULLYING whilst we made the neutrality decision.  We then had a lovely lunch in a nearby restaurant – the drinks exotic, the food divine, a perfect ending to our couch sitting experience. 
     Meanwhile,  the President gets his 30 million dollar military parade.  All the debt and all the issues we currently have, and this is where he chooses to spend thirty million dollars.  If the intention was to commend the military, how about putting that money toward Veteran mental health and regular health care, housing(so many homeless vets)  the Wounded Warrior Project?  Instead, he chooses a parade to feed his all consuming ego.  But.. if the constant lies and juvenile twitter rants and constant unethical-to-the-office-he holds-  slamming of everything and everyone who doesn’t applaud him  and really.. really poor judgement of  having unprotected sex with porn stars doesn’t bother you enough,  a parade is just a parade, right?   
    Man, you couldn’t make this shit up.  It wouldn’t fly in a sitcom because no one would believe it could ever actually happen.    Then again,  I’ve been binge watching Homeland… those folks live through being blown up, poisoned, beaten to a pulp, betrayed, shot, fired, rehired and blown up again more often than we change the sheets on our bed around here. ..and that’s once a week!

Here we go again –

      And that’s the most accurate forecast I’ve heard all morning.   
So… I’ve mucked the barn  and coop, all critters snug for the day and into the evening….  This was the face that mirrored mine as he stepped out into the crapitude…  Yep I know it, Opie… 
      Once chores were done I took a shower and brushed my teeth and my temporary crown fell out pronto.  So I  hauled ass to the Dentist before the storm hit, got that squared away, hit the grocery store with two hundred thousand seventy eight people, got the ingredients for a decent paleo dinner I want to try because I’m on that never ending quest to lose weight and I want to fool myself once again for the two hundred thousand seventy eighth time that I CAN DO THIS!!!!   Jesus, it’s just 25 lbs but you’d think it was 300.   I cannot believe how hard this shit is once you hit your fifties.  Holy cow.  
  Anyway… my dogs aren’t loving the weather either… they’re huddled together wherever I am… If I’m cleaning the bathroom or folding laundry or away on errands… they’re here…   Side note:  Who needs a throw at the bottom of your bed when you’ve got three dogs that fit perfectly, provide warmth and match the decor, I ask you?   Extra side note: I’m as horrified as you are at the totally uncentered position of the print on the wall.  It’s a heavy print.. really big nail that makes a really big hole… hating the other hole making, so I haven’t… yet.  
   
    Or under the plant table in the kitchen if I’m working at the island or sink or stove.  Sally’s toy basket is on the right..  I pick up all the toys on the floor and she proceeds to take them back out one by one, feigning interest for a few seconds with each. 

    I’m tempted to talk about all the political crapitude we are seeing on the news, on our FB feeds, on the web… but I am so damned disgusted and weary of it all it seems better to just… drop the mic. 
    Speaking of TV –  Have you watched Grace and Frankie at all on Netflix?   I am loving it.. binge watched it for a few evenings, now all caught up.  Also just caught up with how the last season of the Bachelor finished off… I hate reality TV,  dumbs down america if you ask me.   Only watched one season of the Bachelor many years ago when it first came out and was horrified at how those women and men put themselves in such an awkward and humiliating situation.  I know.. they knew what they were signing up for… and Money.  … but this last one in particular.. brutal if you ask me.  What a player the bachelor is.. and after “falling in love” with two accomplished beautiful women and leading them both on with the I Love You So Much crap, he dumps one (as they all do).. then proposes to the other, then in the follow up he dumps the fiance ON TV and goes back to the original dumpee.   All this after he was a dumpee on the Bachelorette.   What is enjoyable about this show, is this really entertainment?

And the rain came…

 I cannot remember the last time we had so many days of dreary drizzly grey weather all strung together.  It’s downright depressing.  The gardens are drenched and although very green, also very near drowning. My tomato plants are on the verge of needing replacement and I  just spoke with one of my farm market vendors and they’re having a horrible spring growing season. 
About the only thing in my gardens that are happy are the perennials. 
 The paddocks are mucky, the chicken coop murky… the horses don’t mind the light rain because it keeps the bugs away, but the mucking, quite frankly, sucks. 
 We have babies everywhere…. baby bunnies under the bushes in the backyard, nests all around the outside of the house –  this is the porchlight purple finch nest which once held a cowbird egg but it mysteriously disappeared almost as soon as it appeared.  *ahem.  Mama bird is happily sitting on these eggs as I type. 

 Remember the chickadee babes just a week or so ago? …

See how they’ve grown! Almost ready to leave the nest…


 Here’s a robin I discovered in a pine tree on the edge of one of the hay fields out back…

   Frasier and I have visited the cottage in between the raindrops to get some exercise in – thankfully  Stella is less than 15 miles from here and I’m able to get down there easily whenever it behooves me.  The island neighborhood is perfect for walking….
By the way, this is not my photo… but it IS our cove – the Thimble Islands are out in the distance, there are over 200 of them, some as small as a very large boulder, some have multiple houses on them.  Stella is not visible here, she’s tucked in to the shoreline on the right side mid photo-level.   

Below are a few images (not mine) of homes on some of the Thimbles… they range from tiny to huge and each has it’s own charm.  Each also has it’s own funky commute – small boat access only!  Ugh, think of when you’re baking a cake for company and realize you’ve run out of eggs or milk or toilet paper or garbage bags.  On a rainy day.

 For that reason, I’m grateful Stella’s “island” isn’t really an island.

     And last but not least…. If  we’re friends on FB you’ve noticed I am not spewing quite so much political exasperation lately – there’s just so much of it, all the regurgitating of the offenses is getting really.. really old.  It’s still there, the news is reeling…. what news is fake, what news is worthy, … round and round it goes, and when it will stop, nobody knows.  
What I do know is… we all need to keep a little sense of humor.  Today’s humor served up by none other than the Commander in Chief himself  in a late evening sleep-deprived tweet… his new word , of which is already very popular – it’s gonna be great, it’s yuge, believe me!

 (Sigh*)…. You can’t make this sh*t up.

The good, the bad and the hilarious

   We’ll start with the bad and work our way up.  A few nights ago, my daughter’s horse Max had a belly ache.  Meds didn’t help.  More meds didn’t help… and it was determined he was very sick and needed immediate transport to the Equine hospital (1.5 hours away) if he were going to survive whatever was causing the colic.  At 11:30 p.m.  Our vet had to sedate him because he was so distraught by the pain by the time his chariot arrived to take him to the hospital.  I have never seen a horse in so much pain that came on so quickly, it was a horrible, helpless feeling.

    He had surgery, where they found a large fatty tumor (melon size) wrapped around his colon.  It had shifted, and pushed his colon over. That’s why all the horrible sudden pain.  *sigh.  

   Survival is iffy with these things… and I am happy to report, three days later, Max is doing very well considering what he’s been through.  Thank GOD for equine insurance.  I won’t tell you what this cost… but most people who don’t have equine insurance put the horse down because they can’t afford it.

  I’ve been out in the garden today trying to wash off the stress with fresh air and sunshine… it’s a beautiful thing…and if you don’t already know it, gardens are restorative, they are healing.  If you haven’t started one of your own yet, when the season is right in your neck of the woods… for heavens sake, get out there and plant, nurture, tend.   It will do the same for you, I promise.

How cool is that!

    I know a girl who knows a girl who lives down the street from the newest American Idol!!!… somehow that doesn’t excite you, does it.  

   So here’s the deal –  we’ve ALL had the Fradiani Fever thing going on for a while now because he hails from our shoreline and everything and everyone is all  YAY NICK!!!  Storefronts have banners, restaurants are having parties, I’m sure drinks will be named after him in the local bars. …. OUR HOMETOWN BOY!!!…as if he’s actually our son or cousin or BFF since nursery school or ex boyfriend who we still get along with just fine.  (oh, but don’t we WISH!)

   I get it, I do. I think he’s really talented and a very nice young man and wow, what a thing to happen to someone.   The irony?  Just six months ago he was walking through town like the rest of us, just a regular Joe.   Now?  The girls scream when they see him.   My daughter works on the green where he held a hometown concert last week. You may have seen it on TV if you follow AI.   He was arriving at four with a parade and then the concert. I had to drive her in to work because employees were already told there would be nowhere to park. I saw the lines forming at noon.  WOW.

 26 years ago we were married in a church on this beautiful historic green.   What an awesome place to kick off his new life with his hometown crowd…….

 Wishing you the best of luck, Nick Fradiani!   Gee, your parents sure look familiar.. I think we shop the same days at the Big Y.  Maybe we’re cousins!  🙂

 

Just for Fun

 I love Halloween!… and miss those days of crunching through the autumn leaves with flashlight in hand  and giggling running high-on-candy kids dressed in silly scarey costumes chasing each other to the next house. 

Since my kids are too old now for that sort of foolishness,  I’ll have to settle for this sort of foolishness courtesy Picmonkey…
